Dinner can be such a hassle. Fitting it in at the end of the day when you are tired and less than excited about dirtying a bunch of dishes is not fun. You may even have a picky eater on your hands who will not accept the same meal two nights in a row. These foil packet dinners are the answer to your prayers! They are super simple to prepare, require little clean-up and are quick enough to enjoy a new recipe every night of the week.
5. Grilled Shrimp Fajita Foil Packet
Toss together two large chopped bell peppers, one chopped onion, two tablespoons olive oil, one bunch of chopped scallions, and one-half teaspoon each of Chile powder and ground cumin in a large bowl. Spread the mixture on an eighteen-inch piece of foil. Arrange one and one-quarter pounds of shrimp on top. Squeeze lime over the mixture and cover with another piece of eighteen-inch foil. Cook on the grill for twelve minutes and serve in tortillas.
4. Foil Packet Chicken and Stuffing
Marinade four chicken breasts in half a bottle of Lawry’s Garlic and Herb marinade for at least an hour. Preheat oven to four hundred degrees and spray four sheets of foil with oil. Combine one packet of stuffing with one and one-quarter cups water. Spoon the stuffing onto the center of each piece of foil and top with chicken. Sprinkle cheese, one cup of broccoli and one tablespoon of Ranch dressing on top and cover with foil. Bake for twenty-five minutes.
